Kitchen nightmares: detecting air pollution from commercial ovens
With gas burners firing all day and limited ventilation, chefs and food prep staff are exposed to a harmful mix of indoor pollutants. But as Martin Guttridge-Hewitt learns, times are changing.
On 6th November we held our fifth National Air Quality Conference – and our tenth conference overall – at Prospero House in London. It was our first visit to this venue and it didn’t disappoint.
